When a Recipe calls for CREAMING...
It Is IMPERATIVE that you DOUBLE the time to CREAM...
This means you need to WHIP your butter (fat)/sugar together till it looks like Whipped Cream... -- AND -- ONLY Use room temperature ingredients when CREAMING
The exception to this rule is if the recipe specifically calls for cold butter, like pie crusts, scones, biscuits, etc.
You MUST break down those sugar crystals...
