Peanut Butter Cookie Recipe for a High Altitude Kitchen...NO Shortening...

Our families, favorite peanut butter cookie recipe at 8750’…


Ingredients:


1 cup BUTTER 1 cup Peanut BUTTER 1 cup Granulated SUGAR (hold back a few teaspoons to sprinkle on the cookies before baking) 1 cup Packed Brown SUGAR 2 Large EGGS 1 Tablespoon VANILLA Extract 2-2 1/2 cups all-purpose 11.7% Protein Count FLOUR 1 teaspoon Baking POWDER 1/2 teaspoon Baking SODA 1/2 teaspoon SALT


Directions:


  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until well combined and creamy.

  • Add the eggs, one at a time, and beat well after each addition. Stir in the vanilla extract.

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

  • Gradually add the dry ingredients to the peanut butter mixture and mix until just combined.

  • At this point if you have never baked this recipe I suggest you bake a test cookie… If your test cookie spreads too much, you can add flour to your dough … If your Test cookie doesn’t spread enough, you can add milk to your dough …

  • Drop dough by rounded tablespoons onto the prepared baking sheet, leaving about 2 inches between each cookie.

  • Use a fork to create a crisscross pattern on top of each cookie, pressing down lightly to flatten the dough.

  • Sprinkle with a little sugar before placing in the oven.

  • Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden.

  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
