Here's a recipe for a High Altitude Gingerbread Cake that you can try… our family didn’t like it and thought it was Yuck…Feel free to see for yourself…
Ingredients:
1 cup MOLASSES 1 cup boiling WATER 1/2 cup unsalted BUTTER, at room temperature 1/2 cup granulated SUGAR 2 large EGGS 1 tablespoon VANILLA extract 2 1/2 cups all-purpose 11.7% FLOUR 2 teaspoons ground GINGER 1 teaspoons baking SODA 1 teaspoon ground CINNAMON 1/2 teaspoon ground CLOVES 1/2 teaspoon SALT 1/2 cup hot WATER
Instructions:
Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan.
In a mixing bowl, combine the molasses and boiling water, and stir until well mixed.
In another large mixing bowl, cream together the butter and sugar until light and fluffy using an electric mixer.
Beat in the eggs, one at a time, then add the vanilla extract and mix until well combined.
In a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.
Gradually add the dry mixture to the wet mixture, alternating with the hot water, and mix until just combined.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Once the cake is completely cooled, you can dust it with powdered sugar or frost it with your favorite icing, if desired.
Slice and serve your High Altitude Gingerbread Cake and enjoy!
Note: High altitude baking can sometimes require adjustments to the recipe due to changes in air pressure and humidity. The recipe provided should work well for most high altitude locations, but you may need to make slight modifications depending on your specific altitude and climate. It's always a good idea to keep an eye on your cake while it's baking and adjust the time or temperature as needed to ensure it's baking properly.
The reason this cake failed was due to lack of flour, I estimated what was left in the bag wrong and shorted the cake by probably 1/3 cup… sad day…
