Leavening is considered - Baking Soda, Baking Powder and Yeast...
For Yeast Recipes... (In General) *Reduce yeast by 20% at altitudes above 6000'
PLEASE NOTE... this is not a hard and fast rule as every recipe is created different...Focus on the total amount of Leavening per bake, not reducing the amount... you could be looking at a recipe created for high altitude and you don't want to reduce the leavening too much...
MOST recipes DO NOT NEED TO BE ALTERED FOR ALTITUDE BELOW 6000'...
