Why do my Chocolate Chips get a White Coating? Is this ALTITUDE Related?


The white coating that sometimes appears on chocolate chips is known as "chocolate bloom." There are two types of bloom: sugar bloom and fat bloom.


Sugar bloom occurs when moisture on the surface of the chocolate dissolves the sugar in the chocolate, causing it to recrystallize into larger crystals on the surface.


Fat bloom, on the other hand, occurs when the cocoa butter in the chocolate migrates to the surface and solidifies, creating a whitish film.


Altitude can affect chocolate bloom in a couple of ways. At higher altitudes, the lower air pressure can cause chocolate to melt at a lower temperature, which can make it more prone to blooming. Additionally, changes in temperature and humidity can cause moisture to condense on the surface of the chocolate, which can lead to sugar bloom.


To prevent chocolate bloom, it's important to store chocolate in a cool, dry place with a consistent temperature. Exposure to heat, humidity, or sunlight can all cause chocolate to bloom more quickly. Chocolate should also be stored separately from other foods with strong odors, as chocolate can absorb these odors and develop an off flavor.


It's worth noting that while chocolate bloom is unsightly, it doesn't necessarily mean that the chocolate is spoiled or unsafe to eat. In fact, many chocolatiers intentionally create a bloom on their chocolate to give it a more rustic, handmade appearance. However, if the chocolate has a rancid smell or taste, or if it has been exposed to moisture or mold, it should be discarded.
