High Altitude MUFFIN Recipe -Chocolate Chip or Blueberry or Banana or Nut or any Combination

Here's a delicious muffin recipe - You pick the Mix Ins...


Ingredients:

  • 2 cups all-purpose 11.7% FLOUR

  • 1/2 cup granulated SUGAR

  • 1/2 tsp baking Powder

  • 1/2 tsp baking SODA

  • 1 tsp SALT

  • 1/2 cup unsalted BUTTER, Room Temperature

  • 2 large EGGS

  • 1 cup MILK

  • 2 Tablespoons VANILLA extract - yes 2 TBL

  • 1 cup MIX INS (Choc. Chips, Berries, Nuts, etc)


Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  3. In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until well combined.

  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix, as it can result in tough muffins.

  5. Gently fold in MIX INS.

  6. Using a cookie scoop or spoon, divide the batter equally among the muffin cups, filling each about 2/3 full. I will often use mini muffins and make some with chocolate chips and some with frozen blueberries. I usually overfill my pan, but experiment and make it your own.

  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few crumbs clinging to it.

  8. Remove the muffins from the oven and allow them to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
