High Altitude Popovers make everyone happy!
Ingredients:
1 cup all-purpose 11.7% FLOUR 1/4 teaspoon SALT 2 large EGGS, at room temperature 1 cup whole MILK,U at room temperature 2 tablespoons BUTTER, melted and cooled Vegetable oil or cooking spray
Instructions:
Preheat your oven to 450°F (230°C).
Place a 6-cup popover pan or muffin tin in the oven to heat up. This is crucial - your pan must be so so so hot!
In a medium bowl, whisk together the flour and salt.
In a separate bowl, beat the eggs until frothy. Add the milk and melted butter and whisk to combine.
Add the wet ingredients to the dry ingredients and whisk until smooth.
Remove the heated popover pan or muffin tin from the oven and lightly coat each cup with vegetable oil or cooking spray.
Fill each cup about two-thirds full with the batter.
Bake for 15 minutes at 450°F (230°C), then reduce the oven temperature to 350°F (180°C) and continue baking for another 15-20 minutes, or until the popovers are puffed up and golden brown.
Make sure you’re using an oven thermometer to guarantee the accuracy of your temperature.
Remove the popovers from the oven and serve immediately. I prefer serving with strawberry butter…
Note: Because the air pressure at high altitudes is lower than at sea level, it can be more difficult to achieve the same rise in baked goods. To compensate for this, this recipe uses a higher oven temperature and longer baking time than a standard popover recipe.
